Growing up my parents had a pear tree in their backyard. We used to eat fresh organic pears throughout the summer. They also had peach trees and all sorts of fresh vegetables. That's one thing I miss now that I'm married and moved away. We have a small garden but it's nothing like my ol' mom and dad's! Luckily my parents brought me a box of pears recently! Hooray! Now, I just had to figure what to do with a whole box of pears! Oh man, there's nothing like a sweet juicy pear! They seriously taste like nature's sugar to me. Crazy enough, 1 pear only has 9 grams of sugar while 1 banana has around 14 grams! You would think it was the other way around! This next recipe uses pear as the base but you could easily use apples or peaches instead. I kept the flour simple for you (for those of you that don't like to mix flours). It's simply oat flour. So I have some bad news and some AMAZING news... K, bad news first. Now that our recipes are built up (we have over 130+ now on our website!) I will now only be posting recipes Monday, Wednesday, and Friday. Sad I know! But you'll be able to reap the benefits soon...that's right! Fun surprises to come from donteatwheat! Hooray! They are seriously make-you-wanna-cry good. I'm posting them this week so stay tuned! ;) This next recipe came from necessity. My sister-in-law left town and, before she left, she brought over all these cherries. You can only eat so many until you need a good way to mass eat them...ha ha. I seriously haven't had cherries for so long! When I was a little kid my grandpa used to sell them from the trees in his backyard. He had so many of them! We even had this contest to see who could pump high on his swing set and eat cherries right off of the tree. Proud to say I accomplished it once. Man, we would eat them by the handfuls. Now a days, it seems like if I have to buy cherries they're overpriced and not as good as the ones he grew. K, enough being nostalgic. This next recipe is SOOO yummy. I use FRESH cherries instead of a can and you CAN tell a difference! Plus, it's guaranteed gluten free and I didn't have to hunt the aisles looking for a gluten free cherry pie filling. Enjoy! Wew. That title is a mouthful... I wasn't sure what else to call these though! They are such yummy little treats BUT you actually can feel good about eating them. The only flour I used was brown rice and I threw in a little secret ingredient. Want to know what it is?! I'll give you a clue... It's over running my garden... That's right! Zucchini! These pancakes have SUCH an AMAZING flavor. They're light and fluffy and no one will know they're gluten free. My little Audrey LOVED them so much, she ate 7! Ha ha and she's only 1! The best part: they are Gluten, Dairy, and Sugar Free! The raw almonds give the pancake a boost of protein to help start your day. I love these pancakes because it helps use up my old bananas! I know it's a little out of season but hot apple crisp with cold ice cream is a year round craving for me. I was at my husband's office in the waiting room and I happened to pick up the a Magazine. I usually skip right to the recipes. They always catch my eye. I saw this one and thought I could make that! German pancakes have a lot of egg in them anyways so there's no real need for an extra binder like xanthan gum (making this corn free too). I simply subbed out the flour with rice flour. This makes such a great different breakfast than the norm. It's not too sweet yet you feel like you're eating a cousin of apple pie. And doesn't that picture look pretty too? I'm so proud. You have to admit I'm getting better at photographing my food... Tip from jalene:Don't be afraid to change this up! The apples can easily be replaced by pears (which in my opinion require less sugar. I only used 1/2 tsp instead of 1 Tbsp.
Audrey is a banana-holic. I think she could live with monkeys and eat bananas all day long and be happy. We usually buy a giant bag of organic bananas at Costco to satisfy her wild appetite. :) On occasions, we can't quite eat all the bananas before they go bad. So, that's when we turn to the ol' classic: banana bread! (PS-I also love to make my gluten free banana donuts too or my Banana Almond Pancakes. If you haven't tried those recipes, you should check it out! They're so yummy!!) I've tried a lot of different gluten free banana breads over my years and they've been ok but it seems like they're not as moist as the original gluten infested version. I was playing around with one of my recipes and thought if applesauce makes my waffles moist, maybe it would do the same for banana bread! I also wanted to keep the flour simple for those who don't have all the different kinds of gluten free flours on hand. So guess what, all this calls for is brown rice flour! Tips from jalene:This bread is not super sweet so if you want it sweeter you can add more honey. You may need to add a Tbsp more brown rice flour to compensate dry vs. wet ingredients. The lemon juice is optional in the bread, it doesn't serve a purpose (it just gives it a nice taste!) so you can leave it out if you'd prefer. Enjoyed this bread? I do believe it's time for another dessert! Every Sunday, while I was in high school, I LOVED to make cookies! Now that I'm married to a non-eating dessert nerd...(jk honey about the nerd part, I'm glad you have self control.) But, for those of us that don't mind a cookie every now and again here's another great recipe for you. I must be in a breakfast kick lately...this next recipe is a frenchy favorite: Crepes! I created this after many trials and errors. (It's hard to get gluten-free crepes to stick together) but I think you'll find this recipe very close to the gluten-infested style. The great thing...it's dairy free too! Bon appétit! Makes 7- 7inch crepes Note from jalene:If I am using brown or white rice flour in a recipe, I have found that using a rice milk does not work. So I would suggest soy or almond milk in this recipe. Also, a note on apples: Apples are among the list of the "dirty dozen" which means they are one of the dirtiest fruits/vegetables covered with pesticides and chemicals. In fact, apples have more than over 40 different pesticides and washing alone DOES NOT remove them. So bottom line, always buy your apple products organically. BONUS! These tasty crepes can also be used a gluten-free tortilla alternative! Just simply decrease the maple syrup to 1/2 Tbsp and store in a zip-lock bag for later use. Audrey loves these!
